Agua Fresca de Limn Recipe
This tart, refreshing drink is made with whole limes that are blended with sugar and water. The fruit’s pith gives the drink a slightly bitter taste. If you like your drinks on the sweeter side, or if your limes are large and juicy, you may want to increase the sugar by 2 to 3 tablespoons.

In a blender, add the sugar and 2 cups of water and process on high until the sugar is dissolved, about 15 seconds. Add the lime quarters to the blender and process for 5 more seconds – no more. Set a fine-mesh strainer over a pitcher and pour the mixture through the strainer; discard the solids. Add the salt and the remaining 2 cups of water and stir until well combined.
Step 2
Fill a tumbler with ice and pour the agua fresca over. Add lime wedges or wheels, if using, and serve.
Step 3
VARIATION: Add the salt as directed. Then, fill a tall glass with ice. Pour 1/4 cup of the concentrated lime drink over the ice, followed by 1/4 cup of soda or seltzer water, or your favorite flavored sparkling water. Stir and serve with a lime wedge or wheel.
